Sometimes it just all comes together

This probably doesn't look that great, but it tasted awesome, and was totally easy. 

First I mixed together a couple Tbsp of peanut butter, a little minced ginger, 1/4 cup or so of soysauce, a little water, chopped serano chile (to taste), and a little lemon to make a peanuty sauce. Then, I just prepped whatever veggies I had, potatoes, snow peas, baby broccoli, zucchini, onion, garlic, mushrooms - and then I put them in the wok (already heated with some peanut oil) in order of toughness (potatoes and onions first, zucchini last, for example), and some diced tofu. When they were all tender crisp I added the peanut sauce, covered the pan partially and turned the heat to medium low. It came out as a thai stew. Yum.
